sprinkle a 1 inch thick filet of fish (cod, snapper, salmon, etc.) with 1 tsp salt and leave for 30 minutes. make some rice. heat a fry pan (dry) over med/high heat and lay the fish in it. cook for 4 minutes (let it sit and form a crust... no need to move it). turn it over and cook for 4 more minutes. sprinkle with lemon juice and eat on rice.
